Potassium metabisulphite
Sulphur dioxide: The most widely used wine preservative, it inhibits bacteria and helps prevent oxidation. Can be obtained in several forms, the most common is as a metabisulfite salt. 25 to 100 ppm of free sulpur dioxide should be maintained in the wine for proper protection. Metabisulphite is available as a sodium salt or a potassium salt(potassium is considered healthier than sodium when added to wine). 1/4 tsp. of metabisulphite salt added to 23 litres of wine will give approximately 40ppm of free sulphur dioxide. Metabisulphite is also used for sanitizing equipment, using a solution of 50 grams per 4.5 litres of water.(winemakers trick: add 25 grams of citric acid to your solution to increase the strenght.)
